Cheesecake Factory Crabcakes

Ingredients

1/2 lb lump crabmeat
3 tablespoons plain breadcrumbs (such as Progresso)
2 tablespoons mayonnaise
2 tablespoons minced green onions (green part only)
2 tablespoons minced red bell peppers
1/2 egg
1 teaspoon minced fresh parsley
1 teaspoon Old Bay Seasoning
1/2 teaspoon prepared yellow mustard
1/4 cup panko (Japanese breadcrumbs)
oil

Instructions

Becareful not to stir the crab too much into the other ingredients. Best to fold the mixture gently with a spatula to combine everything. You want the big chunks of tasty crab to stay together as big chunks of tasty crab. Freshly cooked blue crab is the best choice for this recipe; however a good quality canned crab is an acceptable substitute.
